Gingerbread Sandwich Cookies… YUM!

Is is just me, or does the holiday season bring an urge to bake? For real friends, it’s like, Christmas carols, longing for that awesome sound that snow makes when you step on it, and baking. Those are the top three things I think about this time of year.

Anyway, with baking on my mind, I was checking my email one day, and noticed that I’d been approached by Uncommon Goods. I’d heard of this awesome company (and stalked their website) a while back when Holly posted an outfit featuring one of their cute clutches.

Uncommon Goods is an privately-owned retailer that specializes in unique designs and handcrafted gifts, and most of their products are created right here in the good ol’ USofA. From my website stalking, I’d found that they have a little something for everyone. Whether you’re looking for something unique, or something that shows your friends or family member just how well you know them! I’m already thinking about getting these man candles for my husband, they’re SUCH a great idea!

Best of all, they have THESE! Cookie stamps! Seriously, one of the best/cutest ideas ever. Not only are these stamps adorable, but they also met me where I was - a baking addict.

I placed my order, and within just a couple of days, my “Home Made” cookie stamp was delivered to my doorstep. Sadly, the poor little stamp had become detached from the handle. BUT, one little email to an Uncommon Goods representative, and I had a brand spanking new (and fully functional) stamp in no time!

All that needed to be done now was a little Pinterest searching to find THIS perfect cookie recipe and pair it with THIS delicious creamy filling.

It was time to get baking…

When you’re using this stamp, flour will be your BEST FRIEND! You want to make sure nothing sticks to your counter or your stamp, so flour everything up nice.

The stamp really only requires one good press, and your dough will take on the adorable impression.

After the stamping is done, it’s time to cut the cookies out. I don’t actually own a plain round cookie cutter… So I improvised and used one of our cups ;)

Butter-up a cookie sheet, and place the bad boys in the oven at 350 degrees for about 7 minutes.

When the cookies come out, you’ll be tempted to eat them all right away (they smell SO good!).

Resist the temptation, because, believe me, the cookies will be even better when you add this creamy goodness to them.

Make all your little gingerbread sandwich cookies, and stare in wonder and your beautiful work… For about two-seconds. Then EAT those suckers!
